Delicious Dish For Fall: Pumpkin Pancakes Recipe

One of the best things about the fall season is how delicious it is. From the turkey you’ll carve up on Thanksgiving to the pumpkin-flavored lattes your coffee shop just started selling, there are plenty of ways to savor the season – literally.

We want to add one more with this delicious recipe for pumpkin pancakes. To make them, you’ll need:

  • 1 cup of pumpkin puree
  • 1 egg
  • 1 ½ cups of milk
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of vinegar
  • 2 cups of flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of ground allspice
  • 1 teaspoon of ground cinnamon
  • ½ teaspoon of ground ginger
  • 3 tablespoons of brown sugar
  • ½ teaspoon of salt

In a large mixing bowl, stir the pumpkin with the egg, milk, oil, and vinegar.

In another bowl, combine the flour, baking powder, baking soda, allspice, cinnamon, ginger, brown sugar, and salt.

Add the pumpkin mixture to your flour mixture, stirring slowly just until combined. Don’t stir too much, or your pancakes will be tough.

Lightly oil a frying pan or griddle and warm over medium heat. Pour ¼ cup of batter onto the hot surface for each pancake, browning on each side. Serve hot and enjoy!
